The world’s best restaurant, Copenhagen’s Noma, is shutting down. It will close its regular services in 2024 but will return in 2025 as a “giant food lab”. According to its owner, the modern fine dining model is unsustainable. The repercussions of the pandemic on the restaurant industry business had hit them hard. Staffing shortages, financial issues, and rising food costs have been their main problems. Restaurants must recreate and reinvent their business models to compensate and survive.
